  • 4 large potatoes

  • 2 eggs, beaten
  • 1 cup bread crumbs
  • Vegetable oil, for frying

Instructions

  1. Peel the potatoes and cut them into small cubes. Boil them until tender, then drain and mash.

  2. In a large bowl, mix the mashed potatoes with Parmesan cheese, parsley, salt, and black pepper.

  3. Shape the mixture into small balls or cylinder shapes.

  4. Dip each croquette into beaten eggs, then coat with bread crumbs.

  5. Heat vegetable oil in a deep pan or skillet.

  6. Fry the croquettes until golden brown on all sides.

  7. Remove from the pan and place on a paper towel to drain excess oil.
