How To Make Potato Croquettes

Ingredients
- 4 large potatoes
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 1 cup bread crumbs
- Vegetable oil, for frying
Instructions

Peel the potatoes and cut them into small cubes. Boil them until tender, then drain and mash.

In a large bowl, mix the mashed potatoes with Parmesan cheese, parsley, salt, and black pepper.
