Ingredients

  • 1 lb fresh salmon fillets, cooked and flaked
  • 2 eggs
  • 1/4 cup breadcrumbs
  • 1/4 cup minced onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the cooked and flaked salmon, eggs, breadcrumbs, minced onion, fresh parsley, lemon juice, Dijon mustard, salt, and black pepper. Mix well until all the ingredients are fully incorporated.

  2. Shape the mixture into small patties, about 2 inches in diameter.

  3. Heat vegetable oil in a large skillet over medium heat. Fry the salmon croquettes for about 3-4 minutes on each side until golden brown and crispy.

  4. Remove the croquettes from the skillet and place them on a paper towel-lined plate to drain excess oil.

  5. Serve the salmon croquettes hot with your favorite dipping sauce or tartar sauce.
