How To Make Easy Skillet Chicken Primavera Recipe

- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 bell pepper, thinly sliced
- 1 zucchini, thinly sliced
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon Italian seasoning
- 1/2 cup grated Parmesan cheese
- Fresh basil, for garnish

Season chicken breasts with salt and pepper.

In a large skillet, heat olive oil over medium heat. Add chicken breasts and cook until golden brown and cooked through, about 5-6 minutes per side. Remove chicken from skillet and set aside.

In the same skillet, add onion and garlic. Cook until onion is translucent, about 2 minutes.

Add bell pepper, zucchini, cherry tomatoes, and broccoli to the skillet. Cook for 5 minutes, or until vegetables are tender-crisp.

In a small bowl, whisk together chicken broth, heavy cream, and Italian seasoning. Pour mixture over the vegetables in the skillet.

Return chicken breasts to the skillet and simmer for 5 minutes, or until sauce has thickened slightly.

Sprinkle grated Parmesan cheese over the chicken and vegetables. Cover skillet and cook for 2 minutes, or until cheese is melted.
