- 1½lbschicken breasts,(4 pieces), boneless skinless
- 1zucchini,halved lengthwise, thinly sliced into half-moons
- 3medium tomatoes,halved, thinly sliced into half-moons
- 2yellow bell peppers,thinly sliced
- ½red onion,thinly sliced
- 2tbspextra-virgin olive oil
- 1tspItalian seasoning
- kosher salt
- freshly ground black pepper
- 1cupmozzarella,shredded
- parsley,freshly chopped, for garnish
Instructions

Preheat the oven to 400 degrees F.

Make slits in each chicken breast, being careful not to cut through completely, then stuff each with zucchini, tomatoes, bell peppers, and red onion.

Drizzle with oil and season with Italian seasoning, salt, and pepper. Sprinkle with mozzarella.

Bake for 25 minutes until the chicken is cooked through and no longer pink inside.
