How To Make Shrimp Primavera

Ingredients

  • 1 pound of shrimp, peeled and deveined
  • 8 ounces of linguine
  • 1 tablespoon of olive oil
  • 1 garlic clove, minced
  • 1 cup of sliced bell peppers
  • 1 cup of sliced zucchini
  • 1 cup of sliced mushrooms
  • 1 cup of cherry tomatoes, halved
  • 1/4 cup of chicken broth
  • 1/4 cup of white wine (optional)
  • 1/4 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook linguine according to package instructions. Drain and set aside.

  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.

  3. Add shrimp to the skillet and cook until pink, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.

  4. In the same skillet, add bell peppers, zucchini, and mushrooms. Sauté until vegetables are tender, about 5 minutes.

  5. Add cherry tomatoes, chicken broth, and white wine (if using) to the skillet. Cook for an additional 2 minutes.

  6. Return shrimp to the skillet and stir to combine. Cook for another 2 minutes, until shrimp is heated through.

  7. Add cooked linguine to the skillet and toss to coat everything in the sauce.

  8. Sprinkle grated Parmesan cheese over the shrimp and vegetable mixture. Season with salt and pepper to taste.

  9. Garnish with fresh parsley and serve hot.
