Ingredients
- 2 pounds beef stew meat, cut into bite-sized pieces
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 carrots, peeled and chopped
- 2 potatoes, peeled and chopped
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
Instructions

Preheat the oven to 325°F (165°C).

In a large bowl, combine the flour, salt, and black pepper. Add the beef stew meat and toss until well coated.

Heat the vegetable oil in a Dutch oven or oven-safe pot over medium-high heat. Brown the beef stew meat on all sides, working in batches if necessary. Remove the meat from the pot and set aside.

Add the onion and garlic to the pot and sauté until softened, about 5 minutes.

Stir in the carrots and potatoes, cooking for another 5 minutes.

Return the beef stew meat to the pot and add the beef broth, red wine, tomato paste, thyme, rosemary, and bay leaf. Stir to combine.

Cover the pot and transfer it to the preheated oven. Bake for 2.5 to 3 hours, or until the beef is tender and the flavors have melded together.

Remove the bay leaf before serving. Serve the oven-baked beef stew hot with crusty bread or over cooked rice or noodles.
