How To Make Classic Hearty Beef Stew

Ingredients
- 1.5 pounds beef stew meat, cut into chunks
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- 4 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 potatoes, peeled and diced
- 1 cup frozen peas

In a large bowl, combine the flour, salt, and pepper. Dredge the beef stew meat in the flour mixture, shaking off any excess.

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef and brown on all sides. Remove the beef from the pot and set aside.

In the same pot, add the diced onion, carrots, and celery. Cook for 5 minutes, or until the vegetables are softened. Add the minced garlic, dried thyme, and bay leaf, and cook for an additional minute.

Return the beef to the pot and pour in the beef broth and red wine. Stir in the tomato paste. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the beef is tender.

Add the diced potatoes and frozen peas to the pot. Continue simmering for an additional 30 minutes, or until the potatoes are cooked through.

Taste and adjust the seasoning with salt and pepper, if needed. Remove the bay leaf before serving.
