Ingredients
- 1 lb chicken breast, boneless and skinless, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cans (4 oz each) diced green chiles
- 2 cups chicken broth
- 1 cup frozen corn
- 1 cup diced potatoes
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions

In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.

Add the chicken pieces to the pot and cook until browned on all sides.

Stir in the diced green chiles, chicken broth, frozen corn, diced potatoes, ground cumin, and chili powder. Season with salt and pepper.

Bring the stew to a boil, then reduce the heat to low and let it simmer for 30 minutes, or until the chicken is cooked through and the potatoes are tender.
