Ingredients

  • 1 lb beef stew meat, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups diced green chiles (canned or fresh)
  • 2 cups diced potatoes
  • 4 cups beef broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.

  2. In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant, about 5 minutes.

  3. Add the diced green chiles, potatoes, beef broth, cumin, and dried oregano to the pot. Stir well to combine.

  4. Return the browned beef stew meat to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 1 hour or until the beef is tender.

  5. Season with salt and pepper to taste. Serve the green chile stew hot, garnished with fresh chopped cilantro.
