How To Make Lentil Casserole Recipe

Ingredients
- 1 cup dried lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 red bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 2 cups vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheddar cheese
Instructions

Rinse and drain the lentils.

In a large pot, heat some oil and sauté the onion and garlic until fragrant.

Add the lentils, carrot, celery, and bell pepper. Cook for 5 minutes.

Stir in the diced tomatoes, vegetable broth, cumin, paprika, chili powder, salt, and black pepper.

Bring to a boil, then reduce heat and simmer for 40 minutes, or until the lentils are tender.

Preheat the oven to 375°F (190°C).

Transfer the lentil mixture to a casserole dish and sprinkle with shredded cheddar cheese.

Bake for 10 minutes, or until the cheese is melted and bubbly.
