Ingredients

  • 1 cup dried lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 red bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Rinse and drain the lentils.

  2. In a large pot, heat some oil and sauté the onion and garlic until fragrant.

  3. Add the lentils, carrot, celery, and bell pepper. Cook for 5 minutes.

  4. Stir in the diced tomatoes, vegetable broth, cumin, paprika, chili powder, salt, and black pepper.

  5. Bring to a boil, then reduce heat and simmer for 40 minutes, or until the lentils are tender.

  6. Preheat the oven to 375°F (190°C).

  7. Transfer the lentil mixture to a casserole dish and sprinkle with shredded cheddar cheese.

  8. Bake for 10 minutes, or until the cheese is melted and bubbly.

  9. Serve hot and enjoy!
