- 1 pound pork shoulder, cut into 1-inch cubes
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups New Mexico green chile peppers, roasted, peeled, and chopped
- 4 cups chicken broth
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 2 potatoes, peeled and diced
- 2 carrots, peeled and diced
- 1 cup corn kernels
- 1 tablespoon vegetable oil
- Fresh cilantro for garnish
Instructions

In a large pot, heat the vegetable oil over medium heat. Add the pork cubes and brown them on all sides. Remove the pork from the pot and set aside.

In the same pot, add the onion and garlic. Cook until the onion is translucent and fragrant.

Add the roasted green chile peppers, chicken broth, cumin, oregano, salt, and black pepper. Stir to combine.

Return the pork to the pot and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 1 hour.

Add the diced potatoes, carrots, and corn to the pot. Cover and simmer for an additional 30 minutes, or until the vegetables are tender.
