How To Make Chestnut, spinach & blue cheese en croûte

Ingredients
- 1 sheet of puff pastry
- 1 cup of cooked chestnuts, roughly chopped
- 2 cups of fresh spinach leaves
- 100g blue cheese, crumbled
- 1 egg, beaten
- Salt and pepper, to taste
Instructions

Preheat the oven to 200°C (400°F).

Roll out the puff pastry sheet and cut it into 4 equal squares.

In a large pan, sauté the spinach until wilted. Remove from heat and let it cool.

In a bowl, mix together the chestnuts, spinach, and blue cheese. Season with salt and pepper.

Place a spoonful of the chestnut mixture onto each pastry square, leaving a border around the edges.

Brush the edges of the pastry with the beaten egg. Fold the pastry over the filling to create a pocket.

Press the edges together and crimp with a fork to seal.

Brush the tops of the pastries with the remaining beaten egg.

Place the pastries onto a baking sheet lined with parchment paper.

Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
