Ingredients

  • 1 sheet of puff pastry
  • 1 cup of cooked chestnuts, roughly chopped
  • 2 cups of fresh spinach leaves
  • 100g blue cheese, crumbled
  • 1 egg, beaten
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Roll out the puff pastry sheet and cut it into 4 equal squares.

  3. In a large pan, sauté the spinach until wilted. Remove from heat and let it cool.

  4. In a bowl, mix together the chestnuts, spinach, and blue cheese. Season with salt and pepper.

  5. Place a spoonful of the chestnut mixture onto each pastry square, leaving a border around the edges.

  6. Brush the edges of the pastry with the beaten egg. Fold the pastry over the filling to create a pocket.

  7. Press the edges together and crimp with a fork to seal.

  8. Brush the tops of the pastries with the remaining beaten egg.

  9. Place the pastries onto a baking sheet lined with parchment paper.

  10. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.

  11. Serve hot and enjoy!
