How To Make Spiced Duck Date Tagine

Ingredients
- 2 duck breasts, skin on
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1 tsp paprika
- 1 tsp salt
- 2 tbsp olive oil
- 1 onion, sliced
- 3 cloves of garlic, minced
- 2 cups chicken broth
- 1 cup pitted dates
- Juice of 1 lemon
- Fresh cilantro for garnish
Instructions

Score the skin of the duck breasts, being careful not to cut into the meat.

In a small bowl, mix together the cumin, coriander, ginger, cinnamon, paprika, and salt. Rub the spice mixture all over the duck breasts.

Heat olive oil in a tagine or a large, deep skillet over medium-high heat. Add the duck breasts skin-side down and cook for 5 minutes, until browned. Flip and cook for an additional 3 minutes. Remove the duck from the pan and set aside.

In the same pan, add the sliced onion and minced garlic. Cook until softened, about 5 minutes.

Return the duck breasts to the pan, along with any juices that have accumulated. Add the chicken broth, dates, and lemon juice. Bring to a simmer, then reduce the heat to low. Cover and cook for 1 hour, or until the duck is tender.

Remove the duck breasts from the tagine and let them rest for a few minutes. Meanwhile, increase the heat and cook the sauce until thickened, about 10 minutes.

Slice the duck breasts and serve with the sauce. Garnish with fresh cilantro.
