How To Make Warm Lemon Courgette Salad

Ingredients
- 4 courgettes, sliced
- 2 lemons
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup feta cheese, crumbled
Instructions

Preheat grill or grill pan over medium heat.

In a large bowl, squeeze the juice of 1 lemon. Add olive oil, salt, and pepper, and whisk until well combined.

Add courgette slices to the bowl and toss to coat them evenly with the lemon dressing.

Grill the courgette slices for 3-4 minutes on each side until tender and lightly charred.

Transfer the grilled courgette to a serving dish.

Cut the remaining lemon into wedges and squeeze the juice over the courgette.

Sprinkle with fresh basil leaves and crumbled feta cheese.
