How To Make Barbecue Lamb Courgette Salad

Ingredients
- 500g lamb leg steaks
- 2 courgettes, sliced lengthwise
- 2 tbsp olive oil
- Salt and pepper, to taste
- 150g mixed salad leaves
- 1 red onion, thinly sliced
- 150g cherry tomatoes, halved
- 100g feta cheese, crumbled
- Juice of 1 lemon
- 2 tbsp fresh mint leaves, chopped
Instructions

Preheat the barbecue to medium-high heat.

Place the lamb on the barbecue and cook for 3-4 minutes per side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes.

Brush the courgette slices with olive oil and season with salt and pepper.

Grill the courgette slices on the barbecue for about 2-3 minutes per side, until tender and grill marks appear. Remove from heat and let cool slightly.

Slice the lamb into thin strips.

In a large salad bowl, combine the mixed salad leaves, sliced red onion, cherry tomatoes, and crumbled feta cheese.

Add the grilled courgette slices and sliced lamb to the bowl.

Drizzle with lemon juice and remaining olive oil. Season with salt and pepper.

Toss gently to combine all the ingredients.

Sprinkle with fresh mint leaves before serving.
