  • 4 medium courgettes, sliced lengthwise
  • 2 tbsp olive oil
  • 1/4 cup pine nuts

  • Fresh basil leaves for garnish

Instructions

  1. Preheat a griddle pan or skillet over medium-high heat.

  2. Brush the courgette slices with olive oil and season with salt and pepper.

  3. Grill the courgette slices for 2-3 minutes on each side until grill marks appear and they are tender-crisp.

  4. Meanwhile, toast the pine nuts in a dry pan over medium heat until golden brown.

  5. Once the courgettes are grilled, transfer them to a serving platter.

  6. Sprinkle the toasted pine nuts and crumbled feta cheese over the courgettes.
