How To Make Griddled Courgettes with Pine Nuts & Feta
This dish features grilled courgettes with a combination of crunchy pine nuts and creamy feta cheese.

- 4 medium courgettes, sliced lengthwise
- 2 tbsp olive oil
- 1/4 cup pine nuts
- 1/2 cup crumbled feta cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions

Preheat a griddle pan or skillet over medium-high heat.

Brush the courgette slices with olive oil and season with salt and pepper.

Grill the courgette slices for 2-3 minutes on each side until grill marks appear and they are tender-crisp.

Meanwhile, toast the pine nuts in a dry pan over medium heat until golden brown.
