  • 8 oz spaghetti
  • 1 lb salmon fillets, skinless
  • 4 cups vegetable broth
  • 2 cups broccoli florets
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1/2 cup fresh basil leaves
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.

  2. In a large pot, bring the vegetable broth to a boil. Add the salmon fillets and cook for 8-10 minutes, until cooked through. Remove the salmon from the pot and flake it into bite-sized pieces.

  3. In a blender or food processor, combine the broccoli, Parmesan cheese, pine nuts, garlic, basil leaves, and olive oil. Blend until smooth.

  4. Return the pot with the vegetable broth to the stove. Add the cooked spaghetti and flaked salmon. Stir in the broccoli pesto and season with salt and pepper.

  5. Cook for an additional 5 minutes to heat everything through.
