Ingredients

  • 12 oz spaghetti
  • 1 cup frozen peas, thawed
  • 1/4 cup fresh mint leaves
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook spaghetti according to package instructions. Drain and set aside.

  2. In a food processor, combine peas, mint leaves, Parmesan cheese, garlic, and olive oil. Blend until smooth.

  3. Season with salt and pepper to taste.

  4. In a large mixing bowl, toss the cooked spaghetti with the pea and mint pesto until well coated.

  5. Serve immediately and garnish with additional grated Parmesan cheese if desired.
