  • 2 cans of chickpeas, rinsed and drained
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 4 cups of vegetable broth
  • 1 teaspoon of cumin
  • 1/2 teaspoon of paprika
  • Salt and pepper to taste
  • For the gremolata:
  • 1/4 cup of fresh parsley, chopped
  • 1 clove of garlic, minced
  • Zest of 1 lemon

Instructions

  1. In a large pot, heat some olive oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until the vegetables are soft, about 5 minutes.

  2. Add the chickpeas, vegetable broth, cumin, paprika, salt, and pepper. Bring to a boil and then reduce the heat to simmer for 20 minutes.

  3. In the meantime, prepare the gremolata by mixing together the parsley, garlic, and lemon zest in a small bowl.

  4. Using an immersion blender, blend the soup until smooth and creamy. Alternatively, you can transfer the soup to a blender and blend in batches.

  5. Serve the soup hot, topped with a spoonful of the chunky gremolata.
