How To Make Chickpea Soup with Chunky Gremolata

Ingredients
- 2 cans of chickpeas, rinsed and drained
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 carrots, diced
- 2 stalks of celery, diced
- 4 cups of vegetable broth
- 1 teaspoon of cumin
- 1/2 teaspoon of paprika
- Salt and pepper to taste
- For the gremolata:
- 1/4 cup of fresh parsley, chopped
- 1 clove of garlic, minced
- Zest of 1 lemon

In a large pot, heat some olive oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until the vegetables are soft, about 5 minutes.

Add the chickpeas, vegetable broth, cumin, paprika, salt, and pepper. Bring to a boil and then reduce the heat to simmer for 20 minutes.

In the meantime, prepare the gremolata by mixing together the parsley, garlic, and lemon zest in a small bowl.

Using an immersion blender, blend the soup until smooth and creamy. Alternatively, you can transfer the soup to a blender and blend in batches.
