Ingredients
- 2 lbs oxtail beef
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 bell pepper, diced
- 1 tomato, diced
- 1 tsp cumin powder
- 1 tsp paprika
- 1 tsp dried oregano
- 1 bay leaf
- 6 cups beef broth
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish

In a large pot, heat some oil over medium heat. Add the oxtail beef and brown them on all sides.
