Serves:

Ingredients

  • 2 tbsp of butter
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 2 potatoes, cubed
  • 2 cups of chicken broth
  • 1 cup of milk
  • 1 can of corn, drained
  • 1 lb of cod fish, cut into chunks
  • 1 tsp of dried thyme
  • Salt and pepper to taste

Instructions

  1. Melt butter in a pot over medium heat.

  2. Add onions and garlic, sauté until softened.

  3. Add potatoes, chicken broth, and thyme, bring to a simmer for 15 minutes.

  4. Add corn, milk, and cod fish, simmer for another 10 minutes until fish is cooked through.

  5. Season with salt and pepper to taste.
