Ingredients

  • 1 lb. white fish fillets, cut into bite-sized pieces
  • 1 tbsp. vegetable oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp. ginger, grated
  • 2 tbsp. red curry paste
  • 1 tbsp. fish sauce
  • 1 can (13.5 oz) coconut milk
  • 2 cups chicken broth
  • 1 red bell pepper, sliced
  • 1 jalapeno pepper, seeded and chopped
  • 1/4 cup cilantro, finely chopped
  • Salt and pepper

Instructions

  1. In a large pot, heat vegetable oil over medium heat. Add chopped onion, minced garlic, and grated ginger. Cook until onion is translucent.

  2. Add red curry paste and cook for a couple of minutes, stirring frequently.

  3. Add coconut milk and chicken broth. Bring to a simmer.

  4. Add white fish fillets, sliced red bell pepper, and chopped jalapeno pepper. Season with salt and pepper.

  5. Simmer until the fish is cooked through, about 10-15 minutes.

  6. Add fish sauce and stir.

  7. Remove from heat and garnish with cilantro.

  8. Serve hot.
