A spicy and flavorful fish chowder with Thai-inspired flavors.

Ingredients
- 1 lb. white fish fillets, cut into bite-sized pieces
- 1 tbsp. vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp. ginger, grated
- 2 tbsp. red curry paste
- 1 tbsp. fish sauce
- 1 can (13.5 oz) coconut milk
- 2 cups chicken broth
- 1 red bell pepper, sliced
- 1 jalapeno pepper, seeded and chopped
- 1/4 cup cilantro, finely chopped
- Salt and pepper
Instructions

In a large pot, heat vegetable oil over medium heat. Add chopped onion, minced garlic, and grated ginger. Cook until onion is translucent.

Add red curry paste and cook for a couple of minutes, stirring frequently.

Add coconut milk and chicken broth. Bring to a simmer.

Add white fish fillets, sliced red bell pepper, and chopped jalapeno pepper. Season with salt and pepper.

Simmer until the fish is cooked through, about 10-15 minutes.

Add fish sauce and stir.

Remove from heat and garnish with cilantro.
