Ingredients

  • 1 lb white fish fillets (such as cod or haddock), cut into bite-sized pieces
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cups potatoes, peeled and diced
  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, melt butter over medium heat. Add onion and garlic, sauté until fragrant.

  2. Add carrots and celery, and cook for 5 minutes until slightly softened.

  3. Pour in chicken broth and add potatoes. Bring to boil, then reduce heat and let simmer for 15 minutes or until potatoes are tender.

  4. Add fish and cook for 5 minutes or until it is opaque and flakes easily. Reduce heat to low.

  5. Add heavy cream and stir well. Cook for a few minutes until thickened.

  6. Season with salt and pepper to taste. Garnish with fresh parsley and serve hot.
