Ingredients

  • 1 lb firm white fish fillets, skin removed
  • 2 tbsp butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 3 cups chicken broth
  • 1 lb potatoes, peeled and diced
  • 1 cup heavy cream
  • Salt and pepper, to taste

Instructions

  1. Cut the fish into bite-sized pieces and set aside.

  2. Melt the butter in a large pot over medium heat.

  3. Add the onion and garlic and cook until softened, about 5 minutes.

  4. Add the flour and cook for 2 minutes, stirring constantly.

  5. Gradually pour in the chicken broth, whisking constantly to prevent lumps.

  6. Add the potatoes, bring to a simmer, and cook until the potatoes are tender, about 15 minutes.

  7. Add the fish and cream to the pot, and simmer gently until the fish is cooked through, about 10 minutes.

  8. Season with salt and pepper to taste. Serve hot.
