Serves:

Ingredients

  • 2 tbsp butter
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 large potatoes, peeled and diced
  • 2 cups fish stock
  • 1 lb white fish, cut into bite sized pieces
  • 1 cup heavy cream
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and Pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat. Add onion and garlic, sauté until fragrant.

  2. Add potatoes and fish stock, bring to a boil then reduce heat to a simmer.

  3. Add white fish and cook until opaque, approximately 5-7 minutes.

  4. Stir in heavy cream, thyme, rosemary, parsley, salt, and pepper.

  5. Simmer for 10 minutes until the soup is heated through and flavors are well combined.

  6. Serve hot with crusty bread.
