Ingredients

  • 1/4 cup unsalted butter
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp flour
  • 2 cups chicken broth
  • 2 cups whole milk
  • 3 cups potatoes, peeled and diced
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz smoked salmon, chopped
  • 1/4 cup heavy cream
  • Chopped parsley, for garnish

Instructions

  1. Melt the butter in a large pot over medium heat.

  2. Add the onion and garlic and cook until softened, about 5 minutes.

  3. Add in the flour and stir to combine.

  4. Slowly pour in the chicken broth while whisking constantly to prevent lumps from forming.

  5. Add the milk, potatoes, thyme, salt, and pepper. Stir to combine.

  6. Bring the soup to a simmer and cook for 15-20 minutes, or until the potatoes are tender.

  7. Add the chopped smoked salmon and heavy cream to the pot.

  8. Cook for an additional 5 minutes, stirring occasionally.

  9. Serve hot with chopped parsley for garnish.
