How To Make Mediterranean Fish Chowder Recipe

Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1 can diced tomatoes (14 oz)
- 4 cups fish or vegetable stock
- 1 lb white fish fillets, cut into bite-sized pieces
- 1/2 cup pitted Kalamata olives, chopped
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until soft and fragrant, about 5 minutes.

Add the diced red bell pepper, smoked paprika, oregano, and cumin and stir to coat.

Pour in the can of diced tomatoes and fish or vegetable stock and bring to a simmer.

Gently add the fish fillets and olives and cook until the fish is cooked through and flakes easily with a fork, about 10 minutes.

Season with salt and pepper to taste.
