Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1 can diced tomatoes (14 oz)
  • 4 cups fish or vegetable stock
  • 1 lb white fish fillets, cut into bite-sized pieces
  • 1/2 cup pitted Kalamata olives, chopped
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until soft and fragrant, about 5 minutes.

  2. Add the diced red bell pepper, smoked paprika, oregano, and cumin and stir to coat.

  3. Pour in the can of diced tomatoes and fish or vegetable stock and bring to a simmer.

  4. Gently add the fish fillets and olives and cook until the fish is cooked through and flakes easily with a fork, about 10 minutes.

  5. Season with salt and pepper to taste.

  6. Serve hot, garnished with chopped fresh parsley.
