How To Make Gazpacho

  • 6 ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 small red onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of extra virgin olive oil
  • 2 tablespoons of red wine vinegar
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of cayenne pepper (optional)
  • Fresh basil or parsley leaves, for garnish


  1. In a blender or food processor, combine the tomatoes, cucumber, red bell pepper, red onion, and garlic. Blend until smooth.

  2. Add the olive oil, red wine vinegar, salt, black pepper, and cayenne pepper (if using). Blend again until well combined.

  3. Taste and adjust the seasoning if needed.

  4. Transfer the gazpacho to a bowl or individual serving glasses. Cover and refrigerate for at least 2 hours, or until chilled.

  5. Serve the gazpacho cold, garnished with fresh basil or parsley leaves.
