Ingredients

  • 1 cup of blanched almonds
  • 2 cloves of garlic
  • 2 slices of stale bread, crusts removed
  • 4 cups of cold water
  • 1/4 cup of extra virgin olive oil
  • 2 tablespoons of sherry vinegar
  • Salt to taste
  • Grapes and sliced almonds for garnish (optional)

Instructions

  1. Place the blanched almonds, garlic, and stale bread in a blender or food processor.

  2. Add the cold water and blend until smooth and creamy.

  3. Slowly drizzle in the olive oil and sherry vinegar while blending.

  4. Season with salt to taste.

  5. Transfer the soup to a bowl and refrigerate for at least 2 hours to chill and allow the flavors to develop.

  6. Serve the ajo blanco cold, garnished with grapes and sliced almonds if desired.
