You don’t need to wait for a chilly night to enjoy a bowl of this cucumber soup. It’s chilled and seasoned with dill so you get a fresh hit of flavor.

Ingredients

  • lbscucumbers
  • 2tbsponion,(white, red, or green), chopped
  • ½cupbuttermilk
  • ¼cupsour cream
  • 1tbsprice vinegar
  • 1tbspextra virgin olive oil
  • 2tbspfresh dill,chopped
  • ½tspsalt
  • pinchblack pepper

Instructions

  1. Peel, seed, and roughly chop the cucumbers. Chop the onion and dill.

  2. Put all of the ingredients into a blender and pulse until completely smooth. Adjust seasonings to taste. Add more salt and pepper if needed.

  3. Pour into bowls and garnish with a drizzle of olive oil and a feather of dill.
