How To Make Spicy Pepper & Tomato Soup with Cucumber Yogurt

Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 3 bell peppers (any color), seeded and chopped
- 4 tomatoes, diced
- 3 cloves of garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper (adjust to taste)
- 4 cups vegetable broth
- Salt and pepper to taste
- 1 cup plain yogurt
- 1 cucumber, grated
- 2 tbsp fresh mint, chopped
Instructions

Heat the olive oil in a large pot over medium heat. Add the onions and cook until they become translucent.

Add the bell peppers, tomatoes, garlic, cumin, paprika, and cayenne pepper to the pot. Cook for another 5 minutes, stirring occasionally.

Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for 20-25 minutes, or until the peppers and tomatoes are soft.

Using an immersion blender or a regular blender, puree the soup until smooth. Season with salt and pepper to taste.

In a separate bowl, mix together the yogurt, grated cucumber, and chopped mint.

Serve the soup hot, topped with a dollop of the cucumber yogurt mixture. Enjoy!
