- 4 large ripe tomatoes, quartered
- 1 cucumber, peeled, seeded, and chopped
- 1 red bell pepper, seeded and chopped
- 1 small red onion, chopped
- 2 cloves of garlic, minced
- 2 tablespoons of extra virgin olive oil
- 2 tablespoons of red wine vinegar
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of cayenne pepper (optional)
- Fresh basil leaves, for garnish

In a blender or food processor, combine the tomatoes, cucumber, red bell pepper, red onion, and garlic. Blend until smooth.
