  • 4 large ripe tomatoes, quartered
  • 1 cucumber, peeled, seeded, and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 small red onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of extra virgin olive oil
  • 2 tablespoons of red wine vinegar
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of cayenne pepper (optional)
  • Fresh basil leaves, for garnish

Instructions

  1. In a blender or food processor, combine the tomatoes, cucumber, red bell pepper, red onion, and garlic. Blend until smooth.

  2. Add the olive oil, red wine vinegar, salt, black pepper, and cayenne pepper (if using). Blend again until well combined and the soup reaches your desired consistency.

  3. Transfer the gazpacho to a large bowl or individual serving bowls and refrigerate for at least 1 hour to allow the flavors to develop.

  4. Serve chilled, garnished with fresh basil leaves.
