Ingredients

  • 2 medium cucumbers, peeled and diced
  • 1 cup Greek yogurt
  • 1/4 cup fresh mint leaves
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 2 cups cold water

Instructions

  1. In a blender, combine diced cucumber, Greek yogurt, fresh mint leaves, lemon juice, olive oil, minced garlic, salt, and pepper.

  2. Blend until smooth and creamy.

  3. Add cold water to the mixture and blend again.

  4. Chill in the refrigerator for at least 1 hour before serving.

  5. Garnish with additional mint leaves and diced cucumber, if desired.
