Ingredients
- 1 lb chicken breast, boneless and skinless, cut into bite-sized pieces
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 cup okra, sliced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (adjust to taste)
- Salt and pepper, to taste
- Cooked rice, for serving
- Fresh parsley, chopped, for garnish
Instructions

In a large pot, heat some oil over medium heat. Add the chicken and cook until browned. Remove from pot and set aside.

In the same pot, add the onion, bell pepper, and celery. Sauté until they start to soften, about 5 minutes. Add garlic and sauté for another minute.

Add the diced tomatoes, chicken broth, okra, thyme, oregano, paprika, and cayenne pepper to the pot. Bring to a simmer.

Return the chicken to the pot and season with salt and pepper. Simmer for 30-40 minutes, until the chicken is cooked through and the flavors have melded together.

Serve the soup over cooked rice and garnish with fresh parsley.
