Ingredients

  • 1 cup of red lentils
  • 4 cups of vegetable broth
  • 1 can of diced tomatoes
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp of grated ginger
  • 2 tsp of curry powder
  • 1 tsp of ground cumin
  • 1 tsp of ground cinnamon
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional)

Instructions

  1. Rinse the lentils and add them to the slow cooker.

  2. Add the vegetable broth, diced tomatoes, onion, garlic, and ginger.

  3. Stir in the curry powder, cumin, cinnamon, salt, and pepper.

  4. Cook on low for 6 hours.

  5. Once cooked, stir in chopped cilantro if desired. Serve with rice or naan bread.
