Ingredients

  • 1 can full-fat coconut milk
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 bell peppers, chopped
  • 2 cups chopped sweet potato
  • 1 cup chopped carrots
  • 1 cup chopped cauliflower
  • 1 cup vegetable broth
  • 2 tbsp curry powder
  • 1 tsp ground ginger
  • 1 tsp turmeric
  • salt and pepper, to taste
  • fresh cilantro, for garnish

Instructions

  1. In a slow cooker, add the coconut milk, onion, garlic, bell peppers, sweet potato, carrots, cauliflower, vegetable broth, curry powder, ginger, turmeric, salt, and pepper. Stir to combine.

  2. Cover and cook on low for 6 hours, or until the vegetables are tender.

  3. Serve with rice or quinoa and garnish with fresh cilantro.
