Ingredients

  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 bell peppers, sliced
  • 3 carrots, peeled and chopped
  • 1 sweet potato, peeled and chopped
  • 1 can chickpeas, drained and rinsed
  • 1 can coconut milk
  • 1 cup vegetable broth
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • Salt and pepper, to taste
  • Jasmin rice, cooked, to serve

Instructions

  1. In a slow cooker, combine onion, garlic, bell peppers, carrots, sweet potato, and chickpeas.

  2. In a separate bowl, whisk together coconut milk, vegetable broth, curry powder, turmeric, cumin, salt, and pepper. Pour over the vegetables in the slow cooker and give everything a good stir.

  3. Cook on low for 6-8 hours or high for 4 hours.

  4. Serve over jasmin rice and enjoy the deliciously aromatic curry.
