How To Make Vegan Slow Cooker Chickpea Stew Recipe

A hearty vegan stew with tender chickpeas and aromatic spices.

Serves:

Ingredients

  • 2 cans of chickpeas (drained and rinsed)
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 sweet potato, peeled and cubed
  • 2 cups of vegetable broth
  • 1 tsp of cumin
  • 1 tsp of paprika
  • 1/2 tsp of cinnamon
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. In the slow cooker, combine the chickpeas, onion, garlic, carrots, celery, sweet potato, vegetable broth, cumin, paprika, cinnamon, salt and pepper.

  2. Stir all ingredients until well mixed.

  3. Cover and cook on low for 4-6 hours, or until the vegetables are tender.

  4. Serve hot with fresh herbs for garnish, if desired.
