How To Make Smoked Haddock & Bacon Gratin

Ingredients
- 500g smoked haddock fillets
- 200g bacon, diced
- 1 onion, diced
- 3 cloves of garlic, minced
- 200g cheddar cheese, grated
- 300ml double cream
- 2 tbsp butter
- 2 tbsp all-purpose flour
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 180°C (350°F).

In a large frying pan, cook the bacon over medium heat until crispy. Remove from the pan and set aside.

In the same pan, melt the butter and sauté the onion and garlic until translucent.

Add the flour to the pan and cook for 1-2 minutes, stirring constantly.

Gradually whisk in the double cream until smooth and thickened.

Add half of the grated cheese and stir until melted and well combined.

Season with salt and pepper to taste.

Place the smoked haddock fillets in a baking dish and pour the creamy sauce over them.

Sprinkle the cooked bacon and the remaining grated cheese over the top.

Bake in the preheated oven for 20-25 minutes, or until the haddock is cooked through and the cheese is golden and bubbly.

Garnish with fresh parsley before serving.
