How To Make Prawn, Pumpkin & Coconut Stew

Ingredients

  • 500g prawns, peeled and deveined
  • 500g pumpkin, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red chili, seeded and chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 400ml coconut milk
  • 400ml vegetable broth
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and chopped chili. Cook until the onions are soft and translucent.

  2. Add the ground cumin and coriander to the pot and stir for 1 minute to release the flavors.

  3. Add the diced pumpkin to the pot and stir to coat it with the spices. Cook for 5 minutes, until the pumpkin starts to soften.

  4. Pour in the coconut milk and vegetable broth. Bring the mixture to a simmer and let it cook for 15-20 minutes, until the pumpkin is tender.

  5. Add the prawns to the pot and cook for an additional 5 minutes, until they are pink and cooked through.

  6. Season with salt to taste and garnish with fresh cilantro.

  7. Serve the prawn, pumpkin & coconut stew hot with rice or crusty bread.
