Ingredients

  • 9 lasagne sheets
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 500g cooked ham hock, shredded
  • 300g fresh spinach, roughly chopped
  • 400g ricotta cheese
  • 400g canned chopped tomatoes
  • 200g grated mozzarella cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Cook the lasagne sheets according to package instructions. Drain and set aside.

  3. In a large pan, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.

  4. Add the shredded ham hock and cook for 5 minutes.

  5. Stir in the chopped spinach and cook until wilted.

  6. Remove the pan from heat and stir in the ricotta cheese until well combined.

  7. In a separate saucepan, heat the canned chopped tomatoes over low heat. Season with salt and pepper.

  8. Spread a thin layer of the tomato sauce on the bottom of a baking dish.

  9. Place 3 lasagne sheets over the sauce, followed by half of the ham hock and spinach mixture. Repeat the layers, ending with lasagne sheets on top.

  10. Pour the remaining tomato sauce over the lasagne and sprinkle with grated mozzarella cheese.

  11. Cover the baking dish with foil and bake for 45 minutes.

  12. Remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbling.

  13. Allow the lasagne to rest for a few minutes before serving. Enjoy!
