Plump mussels in a savory miso broth bursting with umami flavor.
Serves:
Ingredients
- 3 lbs live mussels, scrubbed and debearded
- 4 cups of water
- 4 tbsp of miso paste
- 1 tbsp of vegetable oil
- 2 cloves of garlic, minced
- 1 inch piece of ginger, minced
- 1 red chili pepper, sliced
- 2 stalks of green onions, sliced
Instructions

In a large pot, heat oil over medium heat. Add garlic, ginger and chili pepper and sauté for 1 minute.

Add water and miso paste and stir until the miso is dissolved.

Increase heat to high and bring broth to a boil. Add mussels and cover the pot.

Cook until the mussels open, stirring occasionally, for about 5-7 minutes.

Discard any mussels that do not open.

Serve hot in bowls, garnished with green onions.
