Tender mussels cooked in spicy harissa broth.
Serves:
Ingredients
- 2 pounds of fresh mussels
- 2 tablespoons of olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 tablespoons of harissa paste
- 1 28-ounce can of diced tomatoes
- 1 cup of white wine
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions

Clean and debeard mussels, discarding any that do not close when tapped.

In a large pot, heat olive oil over medium heat.

Add diced onion and minced garlic, sautéing until soft, about 3 minutes.

Stir in harissa paste and cook for another minute.

Add diced tomatoes, white wine, and season with salt and pepper.

Bring mixture to a boil and add in mussels.

Cover the pot with a lid and steam for 5-7 minutes or until the mussels have opened.

Serve in bowls, garnished with chopped parsley.
