How To Make Indonesian Fried Rice with Mackerel

Ingredients
- 300g mackerel fillets, cooked and flaked
- 4 cups cooked rice, preferably day-old
- 3 cloves garlic, minced
- 2 shallots, thinly sliced
- 2 red chilies, thinly sliced
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sweet soy sauce (kecap manis)
- 1 teaspoon shrimp paste (terasi)
- 4 eggs, fried sunny-side up
- Spring onions, chopped, for garnish
Instructions

In a wok or large frying pan, heat the vegetable oil over medium heat. Add the minced garlic, shallots, and red chilies, and sauté until fragrant.

Add the shrimp paste and stir-fry for another minute.

Increase the heat to high and add the cooked rice. Stir-fry the rice for a few minutes until heated through and well coated with the aromatics.

Add the flaked mackerel, soy sauce, oyster sauce, and sweet soy sauce. Stir-fry for a few more minutes until all the ingredients are well combined and heated through.

Remove from heat and serve the fried rice hot, topped with a fried egg and chopped spring onions.
