How To Make French Country Fish & Mussel Stew

Ingredients
- 1 lb firm white fish fillets, cut into chunks
- 1 lb mussels, cleaned and debearded
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 tbsp olive oil
- 1 cup white wine
- 2 cups fish or vegetable broth
- 1 can (14 oz) diced tomatoes
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.

Add the white wine to the pot and let it simmer for a minute.

Stir in the fish or vegetable broth, diced tomatoes, dried thyme, and dried oregano. Season with salt and pepper.

Bring the mixture to a simmer and add the fish chunks. Cook for about 5 minutes, until the fish is almost cooked through.

Gently add the mussels to the pot and cover it with a lid. Cook for another 5-7 minutes until the mussels have opened.

Discard any unopened mussels. Taste and adjust the seasoning if needed.

Serve the stew hot, garnished with fresh parsley.
