How To Make French Country Fish & Mussel Stew

Ingredients

  • 1 lb firm white fish fillets, cut into chunks
  • 1 lb mussels, cleaned and debearded
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 1 cup white wine
  • 2 cups fish or vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.

  2. Add the white wine to the pot and let it simmer for a minute.

  3. Stir in the fish or vegetable broth, diced tomatoes, dried thyme, and dried oregano. Season with salt and pepper.

  4. Bring the mixture to a simmer and add the fish chunks. Cook for about 5 minutes, until the fish is almost cooked through.

  5. Gently add the mussels to the pot and cover it with a lid. Cook for another 5-7 minutes until the mussels have opened.

  6. Discard any unopened mussels. Taste and adjust the seasoning if needed.

  7. Serve the stew hot, garnished with fresh parsley.
