Ingredients

  • 1 lb white fish fillets, cut into chunks
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 1 cup vegetable broth
  • 1/2 cup dry white wine
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 4 slices crusty bread
  • 2 cloves garlic, halved

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.

  2. Add the diced tomatoes, vegetable broth, white wine, oregano, and basil. Season with salt and pepper. Simmer for 10 minutes.

  3. Add the fish fillets to the pot and cook for another 10 minutes, or until the fish is cooked through and flakes easily with a fork.

  4. Meanwhile, preheat the broiler. Place the bread slices on a baking sheet and toast under the broiler until golden brown. Rub one side of each toast with the halved garlic cloves.

  5. Serve the fish stew in bowls, topped with the garlic toasts.
