How To Make Chipotle Orange Shrimp

Ingredients

  • cupslong-grain rice
  • 3cupswater
  • cupItalian-style salad dressing,zesty
  • lbslarge shrimp,peeled, deveined
  • ¼cuporange marmalade
  • 2tbspchipotle peppers,in adobo sauce, chopped
  • ¼cupfresh cilantro,chopped

Instructions

  1. Bring the rice and water to a boil in a saucepan.

  2. Reduce the heat to medium-low, cover, and simmer for about 20 to 25 minutes until the rice is tender and the liquid has been absorbed.

  3. Heat the salad dressing in a large skillet over medium-high heat. Cook the shrimp in the dressing for about 4 minutes, until beginning to firm.

  4. Stir the marmalade and chipotle peppers into the shrimp mixture and continue cooking for about 3 minutes more until the shrimp are completely pink.

  5. Remove from heat and stir in cilantro.

  6. Serve over rice and enjoy!
