How To Make Vegan Quinoa Salad

A refreshing and healthy salad packed with quinoa, veggies and a zesty dressing.

Serves:

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, diced
  • 1 small cucumber, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • Juice of 2 lemons
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a medium pot, bring the vegetable broth to a boil. Add quinoa, reduce heat to low and cover. Cook for 18-20 minutes or until quinoa is fully cooked. Fluff with a fork and set aside to cool.

  2. In a large bowl, combine cooled quinoa, red bell pepper, yellow bell pepper, red onion, cucumber, parsley, and mint.

  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour over the quinoa and toss to combine.

  4. Serve chilled.
