How To Make Quinoa Salad (Gluten-Free)

This salad is packed with nutritious quinoa, fresh vegetables & herbs, and a zesty dressing.

Serves:

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/2 tsp salt
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • 1/4 tsp black pepper
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped

Instructions

  1. Rinse quinoa in a mesh strainer and transfer it to a medium saucepan. Add water and salt and bring to a boil over high heat.
  2. Reduce heat to low, cover, and simmer for 20 minutes, or until water is fully absorbed.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, and black pepper to make the dressing.
  4. In a large salad bowl, combine cooked quinoa, bell pepper, cucumber, red onion, parsley, and mint.
  5. Drizzle the dressing over the salad and toss to combine.
  6. Serve immediately or refrigerate until ready to serve.
