How To Make Bulgur and Grilled Chicken Skewers

Tender and flavor-packed grilled chicken skewers served over a bed of nutritious bulgur salad.

Serves:

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into cubes
  • 1 red bell pepper, cut into bite-sized pieces
  • 1 yellow bell pepper, cut into bite-sized pieces
  • 1 red onion, cut into bite-sized pieces
  • 1 zucchini, sliced
  • 1/4 cup olive oil
  • 1 tbsp paprika
  • 1 tbsp ground cumin
  • Salt and pepper, to taste
  • 1 cup bulgur wheat
  • 1 1/2 cups water
  • Juice of 1 lemon
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint

Instructions

  1. Preheat grill to medium-high heat.
  2. In a large bowl, mix together olive oil, paprika, cumin, salt and pepper. Add chicken cubes and vegetables to the bowl and toss to coat.
  3. Thread chicken and vegetables onto skewers.
  4. Grill skewers for 10-12 minutes, turning occasionally, until chicken is fully cooked.
  5. While the skewers are cooking, prepare the bulgur salad. In a medium saucepan, bring water to a boil. Add bulgur, reduce the heat to low and let simmer for 10-12 minutes, until cooked through. Drain any excess liquid.
  6. In a large bowl, mix together cooked bulgur, lemon juice, parsley, mint, salt and pepper.
  7. Serve grilled chicken skewers over the bed of bulgur salad.
